This does not include the calories in the 4 biscuits. The biscuits are split to make 8 dumplings. Original Version of the Recipe: Small (about 1 1/2-lb) rotisserie chicken, 1 can 14-oz country-style cream gravy, 1 can 10-oz fat-free chicken gravy, 4 large reduced-fat refrigerator biscuits, 1 package 10-oz frozen peas and carrots, thawed, 1 cup canned low-sodium chicken broth, 1/2 cup chopped onions, 1 tsp poultry seasoning or thyme

Recipe Ingredients for A Man, A Can, A Plan (2nd Helping) - Chicken and Dumplings

457 g , 1.75 lb rotisserie, Small (about 1 1/2-lb) rotisserie chicken
354 g , mushroom gravy
196 g , 1 can 10-oz fat-free chicken gravy
340 g , 10-oz frozen peas and carrots, thawed

Recipe Directions for A Man, A Can, A Plan (2nd Helping) - Chicken and Dumplings

  1. Use a fork and your fingers to shred the chicken, discarding the skin and bones.

  2. In a large saucepan, mix the chicken with everything except the biscuits.

  3. Bring to a boil over medium-high heat.

  4. Reduce the heat to medium-low and simmer for 25 minutes.

  5. Cut the biscuits in half and roll between your palms to shape into balls.

  6. Drop the balls into the pot, sinking them into the stew. Cover and simmer for 15 minutes, or until the dumplings are swollen and cooked through.
