Recipe Ingredients for Mamie Eisenhower's Pumpkin Pie

3 egg yolks
1 cup cooked pumpkin
1/2 t salt
1/2 cup milk
1/4 cup cold water
3 egg whites
3/4 cup brown sugar
1/2 t ground nutmeg
1 envelope gelatin
1 t ground cinnamon
1/4 cup white sugar
1 pie crust

Recipe Directions for Mamie Eisenhower's Pumpkin Pie

  1. Beat the egg yolks. Combine with brown sugar, pumpkin, milk, salt and spices in microwave-safe bowl. Cover and microwave 4 min or until thick. Stir halfway through cooking time.

  2. In a cup or small bowl, soak one envelope of Knox gelatin in 1/4 cup cold water until it thickens. (This takes just a few minutes). Stir the gelatin thoroughly into the hot pumpkin mixture. Then chill until partly set.

  3. In a separate bowl, beat the egg whites. Add sugar and beat again stiffly. Fold into cooled pumpkin/gelatin mixture.

  4. Pour into pre-baked pastry pie shell and chill in refrigerator until set. Top with whipped cream.

  5. Store in refrigerator.
