Recipe Ingredients for Mama's Risotto

4 cup chicken stock
2 tbsp butter
1 red onion
1 2/3 cups Orzo
1/2 cup mozzarella
1 tbsp thyme
8 oz sliced mushrooms
2 cloves garlic
3 tbsp soy sauce

Recipe Directions for Mama's Risotto

  1. sautee mushrooms in butter and soy sauce, add onion and garlic. Pre heat chicken stock in seperate pan on low heat. Once mushrooms are done add Orzo in middle of pan on Medium Heat. The key is to slow add chicken stock untill it soaks into the Orzo. Towards the end, throw in the cheese and stir till melted.
