Recipe Ingredients for Mama's Potato Salad

8 cups potatoes, cubed
2 stalks celery
2 carrots
1 onion
1/4 cup mayonnaise
2 tablespoons mustard
2 teaspoons celery seed
4 oz pimento, (1 small jar)
4 tablespoons sweet pickle relish

Recipe Directions for Mama's Potato Salad

  1. Boil and peel potatoes and cut into cubes. Cover bowl and place in refrigerator to fully cool potatoes.

  2. de-string celery and chop finely. Peel and chop carrots. Dice onion. Mash pimento into small pieces. Mix in bowl with pickle relish. Cover and let sit overnight to blend flavors.

  3. Mix potatoes and vegetables, add mayonnaise and mustard. Mix well. Add celery seed and mix.
