Recipe Ingredients for Mama's Meatloaf - 4 oz. per serving

4 lb. lean ground beef
2 eggs, beaten
1/2 large onion, diced
3 cloves garlic, minced
1/4 c. low sodium soy sauce
1/2 c. tomato sauce, for meatloaf
1/2 c. tomato sauce, for top
1/4 c. bread crumbs
1 t. sea salt
1 t. black pepper

Recipe Directions for Mama's Meatloaf - 4 oz. per serving

  1. Preheat oven to 350F. Spray broiler pan with cooking spray.

  2. In a small bowl, lightly whisk together eggs, 1/2 C. tomato sauce, soy sauce salt and pepper.

  3. In a large bowl put in meat, onion, garlic, bread crumbs and egg mixture. Mix using your hands until just combined. Don't overwork the beef as it makes it tough.

  4. Shape into loaf, place on broiler pan and spread the other 1/2 C. tomato sauce on top. Bake in preheated oven for 60-70 mins. until no longer pink in center.

  5. Remove from oven, tent with aluminum foil and let rest 7 mins. Serve immediately.
