A warm hearty one pot favorite. So delicious and filling,Everyone I have served this too wont stop coming back for more! Its addicting and not too bad on the waisteline. a must try.(strongly suggest using arborio, it is not meant to be made with regular white rice)

Recipe Ingredients for Mama's Butternut Squach Risotto

49 oz Chicken 33% Less Sodium Broth Rtsb
280 grams Squash, Winter, Butternut
1 cup Arborio Rice
1/2 cup monterey jack cheese
2 oz grated romano cheese
3 tbsp Butter

Recipe Directions for Mama's Butternut Squach Risotto

  1. heat broth in stock pot to boiling, than simmer-leave simmering

  2. Heat butter in pan over medium

  3. Once butter is bubbling add the rice.

  4. Stir in arborio rice and butter together, let cook for three min- do not brown the rice

  5. lower to simmer and add one cup of hot broth to the rice

  6. let the rice slowly soak up the liquid, stirring occasionally. should take 3-5 min. repeat this process two times.

  7. Add in the butternut squash after the last cup of broth has evaporated,add another cup of broth

  8. stir occasionally while the squash begins to cook and the liquid is absorbed into the rice.

  9. add one cup of hot broth and stir occasionally, wait until all liquid is absorbed then repeat this process until the rice is done cooking.

  10. once everything is done cooking, add the cheese right before serving. You may add additional parmesean to top it off. serve hot! You can have four-six main dish servings, it also makes a great side dish. I love it with pork tenderloin, tri tip, or fish.
