Cranberry relish from NPR's Susan Stamberg's mother-in-law. It sounds terrible but tastes terrific!

Recipe Ingredients for Mama Stamberg's Cranberry Relish

2 cups raw cranberries
1 small onion
1/3 cup sugar
3/4 cup fat-free sour cream
2 tbsp horseradish

Recipe Directions for Mama Stamberg's Cranberry Relish

  1. Grind the cranberries and onion together in a meat grinder or food processor

  2. Add remaining ingredients and mix

  3. Put in a plastic container and freeze

  4. A few hours before serving, remove from freezer and place in refrigerator

  5. The relish will be thick, creamy, and shocking pink.

  6. Serving size: 1/4 cup
