Recipe Ingredients for Mama Peas Baked Oatmeal Squares

2 c. old fashioned oats
1/2 c. organic brown sugar
2 t. ground cinnamon
2 t. baking powder
1 t. salt
1 c. unsweetened almond milk
6 oz. silken tofu
1/2 c. unsweetened applesauce
1 t. vanilla extract
1/4 c. dried cranberries
1/4 c. golden raisins

Recipe Directions for Mama Peas Baked Oatmeal Squares

  1. Preheat oven to 350, if baking immediately. Mixture can be made ahead of time and refrigerated overnight, to be baked in the morning (leftovers also make great snack bars, much like a chewy granola bar).

  2. In a large bowl, combine oats, sugar, cinnamon, baking powder, salt, golden raisins and cranberries.

  3. In a blender or food processor, combine remaining wet ingredients and process until smooth.

  4. Add wet ingredients to dry and mix well.

  5. Spread mixture into a 88 pan that has been sprayed with cooking spray and either bake immediately or refrigerate.

  6. If baking immediately, bake for approximately 40 minutes. If baking the next day, the oats will have absorbed some of the moisture and will only need to bake for approximately 30 minutes.

  7. Cut into squares and serve with desired toppings.
