Recipe Ingredients for Mama Mandola's Copycat chicken soup

5 celery stalks
4 medium carrots, peeled
1 onion, large
2 potatoes, medium, peeled
1 green pepper, large
14 oz plum tomatoes
3 lbs. chicken breast
2 garlic cloves, mined
1/2 cup chopped parsley
6 quarts water
1 salt and pepper

Recipe Directions for Mama Mandola's Copycat chicken soup

  1. dice celery, carrots, onion, potatoes and pepper into 1/4 inch pieces. Chop tomatoes, reserve juice.

  2. place veggies thru garlic in 10 qt stock pot.

  3. add water and season salt and pepper.

  4. low heat, bring to a boil

  5. skim foam off-partially cover and simmer 2 hours

  6. when finished, remove chicken pieces with slotted spoon. Let cool

  7. Mash veggies with back of spoon and shred chicken when cool. Return to soup.

  8. Refrigerate and remove solidified fat.
