This is a very refreshing salad, goes well with fish or on tostadas. I like it alone on a lettuce leaf.

Recipe Ingredients for Mama Lupe's veggie ceviche

6 cup Cauliflower
4 medium Tomatoes
1 cup, chopped Onions
1/2 cup Lime Juice
6 serving, raw Cilantro

Recipe Directions for Mama Lupe's veggie ceviche

  1. Shred carrot and cauliflower in a cheese grater

  2. Add finely chopped, tomatoes, onions and cilantro.

  3. Mix well and and season with lime juice and salt to taste.
