Recipe Ingredients for Mama Kourtesi?s Beet and Green Salad

1 1/2 lb baby beets, with greens attached
3 tbsp extra-virgin olive oil
3 tbsp white wine vinegar
1 Sea salt, to taste
1 Freshly ground black pepper, to taste

Recipe Directions for Mama Kourtesi?s Beet and Green Salad

  1. 1. Trim the leaves from the beets half an inch from the base of the stem. Wash, dry and chop leaves.

  2. 2. Bring a large pot of salted water to a boil. Add beets, lower heat to maintain a vigorous simmer, and cook for 20-35 minutes (depending on size) or until the tip of a sharp knife can penetrate to the beet?s center without resistance. Using a slotted spoon, transfer beets to a bowl and let stand until cool enough to handle. Peel and cut into -inch wedges.

  3. 3. Bring water back up to a boil and add greens. Boil for 5 minutes or until greens are wilted and stems are tender. Drain well.

  4. 4. Mix beets and greens together in a large salad bowl and toss with olive oil, vinegar, salt and pepper. Let sit for at least 10 minutes before serving.
