Recipe Ingredients for Malaysian Noodle Soup

2 tbsp. vegetable oil
1 c. onions, sliced
3 tbsp. chili
1 tbsp. fresh ginger
2 c. chicken stock
1 c. coconut milk
1/4 lb. rice noodles
1 c. bean sprouts
1 c. romaine lettuce,
2 tbsp. mint, basil, cilantro

Recipe Directions for Malaysian Noodle Soup

  1. # In large soup pot, saute the onions in the vegetable oil until tender. Stir in the curry paste and ginger. Sweat for about 2 minutes or until very aromatic.

  2. # Add stock, bring to a boil, and simmer for 20 minutes. Finish with coconut milk, simmer for another five minutes and season to taste.

  3. # Divide the soup into four warmed bowls, and garnish each with your choice of additions below.

  4. For Garnish

  5. 1/4 lb. rice noodles rehydrated in boiling water until tender

  6. 1 c. bean sprouts

  7. 1 c. romaine lettuce, chiffonade

  8. 2 tbsp. mixed herbs, rough cut mint, basil, cilantro

  9. 1 c. extra firm tofu, marinated in hot sauce and sesame oil, and salt
