Recipe Ingredients for Malay Spiced Pork

2 tsp Curry Powder
2 tbsp Tomato Ketchup
30 grams Chutney
1 lemon yields Lemon Juice
2 oz Sultanas
250 grams Yoghurt
650 grams Pork, Fresh, Loin, Tenderloin
1 1tsp Olive Oil
1 large Onions
28 grams Flour
400 grams Soup, stock, chicken, home-prepared
3 tbsp Coconut Cream
2 medium (3" dia) Apples
1 dash Salt

Recipe Directions for Malay Spiced Pork

  1. Combine the curry powder, tomato ketchup, mango chutney, lemon juice, sultanas and yoghurt in a large non-metallic dish. stir in the pork cubes until well coated, cover and leave to marinade in the fridge for a few hours or overnight.

  2. Heat the oil in a large saucepan, add the onion and cook for a few minutes, stirring occasionally, without browning.

  3. Stir the flour into the onions, then gradually stir in the stock. Add the pork mixture and the remaining ingredients, bring to the boil and transfer to the slo-cooker.

  4. Cover and cook on low for 6 - 8 hours.
