Recipe Ingredients for Makhani Chicken (Indian Butter Chicken)

1 3/4 pounds boneless, skinless chicken
1 tbsp lemon juice
1 tbsp chili powder
1 pinch salt
1 cup yogurt
2 tbsp garlic paste
1/2 tbsp garam masala
2 tbsp butter, melted
1 tbsp chili powder
2 tbsp ginger paste
2 tbsp lemon juice
2 tbsp olive oil
1 tbsp butter
1 tbsp garam masala
1 tbsp ginger paste
1 tbsp garlic, chopped
1 tbsp green chile, chopped
2 cups tomato puree
1 tbsp chili powder
1 cup water
1 tbsp honey
1/2 tsp fenugreek leaves, dried
1 cup heavy cream

Recipe Directions for Makhani Chicken (Indian Butter Chicken)

  1. Cube chicken breasts and place in a nonporous glass dish with 1 T lemon juice, 1 T chili powder, and salt to taste.

  2. Toss to coat. Cover dish and refrigerate for 1 hour.

  3. Drain yogurt in a cloth for 15 to 20 minutes. Place in a medium bowl. Mix in salt to taste, 2 T garlic paste, .5 T garam masala, 2 T melted butter, 1 T chili powder, 2 T ginger paste, 2 T lemon juice and 2 T olive oil. Pour over chicken and marinate for another 3 to 4 hours.

  4. Preheat oven to 400 degrees

  5. Place chicken on skewers, and into a 9x13 baking dish. Bake for 20 minutes, or until nearly cooked through.

  6. Melt 1 T butter in a medium saucepan over medium heat. Stir in garam masala. When masala begins to crackle, mix in 1 T ginger paste, 1 T chopped garlic and 1 T chopped green chiles. Saute until tender, then stir in tomato puree, 1 T chili powder, salt and 1 cup water. Bring to a boil; reduce heat to low and simmer, stirring in honey and fenugreek.

  7. Place chicken in sauce. Cook 5 minutes, or until chicken is no longer pink inside.

  8. Stir in fresh cream.
