Recipe should make about 6 dozen meatballs, but I prefer to make mine a little larger than normal. Calories for this recipe are per meatball, for a batch that made 53.

Recipe Ingredients for Make-Ahead Meatballs

2 eggs
3/4 cup uncooked instant oats
1/4 cup onion, finely chopped
1 1/2 tsp salt
1 tsp worcestershire sauce
1/4 tsp pepper
1/4 tsp garlic powder
2 pounds lean ground beef

Recipe Directions for Make-Ahead Meatballs

  1. In a large bowl, beat eggs.

  2. Add the next six ingredients.

  3. Add beef; mix well. (Easiest way to do this is to knead it with clean hands until all is combined.)

  4. Shape into 1-inch balls (about six dozen.) Place in single layers on ungreased baking sheets.

  5. Bake at 400F for 10-15 minutes or until no longer pink, turning often. Drain and cool. Freeze in containers or freezer bags.
