Small tasty burritos that can be frozen and heated for a quick healthy mini-meal- recipe can be adjusted for whatever you've got at home.

Recipe Ingredients for make-ahead burrito bombs

0.85 cup Rice, Brown, Long-grain
2 cup Black Beans
59 1/2 grams Bell Pepper Red
1 medium (4-1/8" long) Onions, Spring Or Scallions
1 tbsp Olive Oil
113 2/5 grams Mozzarella, Part Skim Milk Cheese
10 tortilla Flour Tortillas
3 cup Spinach
400 grams Salsa

Recipe Directions for make-ahead burrito bombs

  1. cook brown rice separately

  2. saute beans, chopped bell pepper, green onion in olive oil

  3. warm tortillas slightly

  4. when all ingredients are room temperature, layer rice, bean mixture, salsa, shredded cheese and spinach in a tortilla.

  5. wrap each tortilla like a little burrito, and wrap in plastic wrap or foil.
