Make ahead bran muffins. Bake some and keep the batter in the fridge for up to 6 weeks

Recipe Ingredients for Make Ahead Bran Muffins

4 cup Original Cereal
2 cup (8 fl oz) Water
5 tsp Baking Soda
2 cup Sugars, Granulated
0.67 cup Olive Oil
2 tsp Vanilla Extract
4 cup Cultured Lowfat Butter Milk
2 cup Complete Wheat Bran Flakes
2 cup Wheat Flour, Whole-grain
3 cup Gold Medal All Purpose Flour
1 tsp Salt, Table

Recipe Directions for Make Ahead Bran Muffins

  1. Heat over to 400

  2. Line muffin tins with paper liners and spray with cooking spray.

  3. Mix boiling water, all-bran, and baking soda, and set aside

  4. In large bowl add sugar, olive oil, vanilla, butermilk and bran flakes. Blend unitl well mixed. Add water/bran mixture and blend. Fold in flour and salt.

  5. Fill muffin tins 2/3 full and bake for 15-20 minutes. Add diced apples, or other fruit to taste.
