Indian fried flatbread stuffed with sweet corn and flavoured with fenugreek

Recipe Ingredients for Makai Methi Paratha

2 cup Wheat Flour, Whole-grain
1/2 cup Corn, Sweet, Yellow
8 oz Fenugreek Leaves
3 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled
0.5 cup (8 fl oz) Yogurt, Plain, Whole Milk, 8 Grams Protein Per 8 Ounce
1 oz Peppers
1 tbsp Soy Oil
12 tsp Soy Oil

Recipe Directions for Makai Methi Paratha

  1. add salt to the wholewheat flour and mix.add yogurt,chopped fenugreek leaves,1 tbsp of oil as shortening and knead with 3/4 cup of water into a dough.

  2. in a separate bowl,mix together mashed potatoes,crushed corn kernels,salt and green chillies.divide the dough and filling into eight equal portions.

  3. roll out each portion of the dough into a small circle.place a portion of the stuffing in centre, gather the edges and pinch together and roll into a ball.cover the balls with a damp cloth and leave to rest for about 15 minutes.

  4. heat a tawa. press the stuffed balls down lightly, sprinkle with a little flour and roll out into fairly thick parathas.

  5. shake off the excess flour and roast on a tawa over high heat.drizzle a little oil around and cook till golden.flip over and drizzle some more oil around and cook till the other side is golden. serve hot.
