My gluten-free version - reworking for over a year - now very yummy! Works with what flour as well.

Recipe Ingredients for Maiya's Oatmeal Coconut Raisin Cookies

4 tablespoons salted butter, at room temperature
1/2 cup Organics Applesauce
1/2 cup organic brown sugar
1/2 cup organic raw sugar
3/4 teaspoon salt
1 large egg
1 teaspoon pure vanilla extract
1 cup all-purpose flour, gluten free flour
1 teaspoon baking powder, gluten free
1/2 teaspoon baking soda
1 teaspoon cinnamon
3 cups 100% Natural Steel Cut Oats (dry)
8 oz Organic Coconut Medium Flakes, unsweetened
1 cup Seedless Raisins
1/2 tablespoon lemon zest, from one lemon
1 tablespoon orange zest, from one orange

Recipe Directions for Maiya's Oatmeal Coconut Raisin Cookies

  1. To Make Cookie Dough:

  2. In mixer, blend: butter, applesauce, sugar, salt, egg, milk, and vanilla extract. Slowly mix in: flour, baking soda, baking powder, cinnamon. Remove bowl from mixer and fold in oats, coconut, raisins, and zests.

  3. Refrigerate dough for at least 2 hours. (I place the dough in a refrigerator storage container, so I can bake the cookies in fresh batches).

  4. To bake:

  5. Preheat oven to 350. Make 1 1/2 inch balls of dough and flatten with fingers onto cookie tray. I cook trays of 15 cookies. Place tray on the center rack. Bake for approximately 20 minutes.
