Recipe Ingredients for Maine Pumpkin Bread

2 cup, mashed Pumpkin
4 large Egg, Whole
1 cup Vegetable Oil, Canola
0.67 cup (8 fl oz) Water
1.5 cup Sugars, Granulated
72 tsp No Calorie Sweetener
3.5 cup Wheat Flour, Whole-grain
2 tsp Leavening Agents, Baking Soda
1 tsp Cinnamon, Ground
1 tsp Nutmeg, Ground
0.5 tsp Cloves, Ground
0.25 tsp Ginger, Ground

Recipe Directions for Maine Pumpkin Bread

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7X3 in loaf pans (or equivalent).

  2. In a large bowl, mix together pumpkin puree, eggs, oil, water, sugar, and Splenda (1.5 cups) until well blended. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.

  3. Bake for about 50 minutes in the preheated oven. Loaves are done when a toothpick inserted in center comes out clean.
