Recipe Ingredients for Main - Pad Phet Eggplant

100 grams Soft (Silken) Tofu
132 1/10 grams chinese eggplant
16 7/10 grams onions
5 7/10 grams garlic
28 2/5 grams bean sprouts
57 4/5 grams radish
16 3/5 grams Snow Peas
34 7/10 grams mushrooms
3/10 grams Red Pepper Chili Flakes
3 3/10 grams Soy Sauce
1/4 tsp dried basil

Recipe Directions for Main - Pad Phet Eggplant

  1. In a wok or large high-sided sauté pan, heat the oil until just shimmering.

  2. Add the eggplant and fry for 30 seconds.

  3. Remove the eggplant from the pan and spray pan once more.

  4. Reheat the wok.

  5. Add the onions, garlic, bean sprouts, radish, snow peas, mushrooms and hot chili flakes and stir-fry for 1 minute.

  6. Add tofu. Stir fry for one minute.

  7. Return the eggplant to the wok and continue stir-frying for 1 minute.

  8. Add the soy sauce and stir-fry for 30 seconds.

  9. Add the basil and stir-fry for 1 minute.

  10. Pour the wok's contents into a serving bowl.
