Recipe Ingredients for Main (Moroccan), Stewed Veggies and Couscous

1 large zucchini, cubed
1 1/2 cups garbanzo beans
1 4/5 c diced tomatoes
1/4 c cilantro leaves
1/2 tbsp olive oil
1 c water
1/2 tsp cayenne pepper
1 tsp ground cumin
1/2 tsp ground cinnamon
1/2 c couscous
1/4 c golden raisins
1/2 cup cilantro, chopped

Recipe Directions for Main (Moroccan), Stewed Veggies and Couscous

  1. place oil in a large saute pan or wide pot over medium-high heat

  2. season zucchini and cook in pan, stirring often

  3. when zucchini pieces have browned lightly, add garbanzo beans, tomatoes, water, cayenne, cumin, and cinnamon

  4. turn heat to low and simmer for a couple minutes

  5. season to taste with more salt and pepper

  6. garnish with chopped cilantro

  7. cook couscous per package instructions and mix with raisins and cilantro
