Two eggs gives more protein. Use Egg Beaters, 1/2 cup, scrambled in place of whole eggs to eliminate a lot of the fat.

2 tbsp reduced fat mayonnaise
1/8 tsp salt

  1. Boil the eggs over medium heat about 12 minutes. Cool in fresh cold water. Peel when cool enough to handle.

  2. Mash eggs with a fork; stir in mayonnaise. Season with salt, and also pepper and pickle relish if desired.
