Recipe Ingredients for MAIN COURSE - Spiced Congee

2 medium raw Onion Red
15 slices (1" dia) Ginger Root
20 clove Garlic
1 1/2 cup Texmati White
4 tbsp Orange Peel
1 tsp Peppercorns
3 tsp Sea Salt
1 glass (3.5 fl oz) Wine, Table, White
16 cup Soup, stock, chicken, home-prepared
1 cup Tofu, Firm
4 tbsp chopped Onions, Spring Or Scallions
1/2 cup Coriander Leaves
600 grams Whole Young Chicken
10 tbsp Bonito Flakes
1 tbsp Olive Oil

Recipe Directions for MAIN COURSE - Spiced Congee

  1. Saute aromatics in olive oil.

  2. Add uncooked rice. Saute.

  3. Deglaze with white wine. Reduce.

  4. Add stock.

  5. Boil rice until cooked.

  6. Season.

  7. Top with tofu, bonito, spring onions, shredded chicken meat and cilantro.
