Main course dinner salad. Lettuce may vary. Carrots, mushrooms and other items can be added. Uses low calorie, low fat salad dressing, which also can be reduced in quantity or substituted with vinegar, olive oil, and herbs.

Recipe Ingredients for Main Course Salad

2 cups romaine lettuce (or field greens)
112 g. red or green leaf lettuce (2 cups=112 g.)
3/4 cup red cabbage, shredded
3/4 cup cucumber, sliced
3/4 cup red, orange, or yellow pepper, chopped
3/4 cup tomatoes, chopped
2 tbsp almonds, blanched, sliced
2 tbsp balsamic vinaigrette

Recipe Directions for Main Course Salad

  1. Wash all ingredients thoroughly.

  2. Slice, tear, and/or chop into bite-size pieces.

  3. Mix and serve with light dressing.
