Recipe Ingredients for Mahi Mahi Rockefellar

622 grams Mahi Mahi
4 slices Lower Sodium Bacon
1 tsp Garlic Powder
1 dash Pepper, Black
1 tbsp Omega-3 with Extra Virgin Olive Oil Light Buttery Spread
2 tbsp chopped Shallots
3 cloves, raw Garlic
2 cups raw Spinach
2 serving Evaporated Milk
1 serving Pepper Sauce
4 oz Mozzarella, Part Skim Milk Cheese
0.5 cup Parmesan, Grated Cheese

Recipe Directions for Mahi Mahi Rockefellar

  1. Cook the bacon in a skillet, drain fat and chop.Heat a skillet. Season mahi mahi with garlic powder and pepper. Cook in skillet just before it's flaking. Leave slightly undercooked. Remove from skillet and put iun baking dish.

  2. Preheat broiler and move shelf 6" from top. Melt butter and add spinach. Cook until it is wilted, add shallots and garlic. Cook for about 2-3 minutes. Stir in bacon, hot sauce and evaporated milk. Lower heat to simmer and add Mozzarella cheese a little at a time until it's all melted. Add evaporated milk, if necessary to make a sauce. Split sauce between fillets. Top with grated parmesan and broil in oven for about 5 minutes or until cheese is browned. Enjoy!
