Recipe Ingredients for Mahi Mahi with red beans

2 cups water
1 cup brown rice
1/4 cup coconut
1 cup red beans, drained
1/4 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon dried thyme
1/4 teaspoon cayenne pepper
1 pound mahi mahi fillets
1/2 teaspoon olive oil
2 tablespoon mango chutney
1 banana
1 scallion, finely chopped
1 tablespoon chopped cilantro

Recipe Directions for Mahi Mahi with red beans

  1. Cook rice

  2. add coconut and red beans

  3. combine spices and seasonings, sprinkle on fish fillets

  4. Broil fish 5-6 minutes each side

  5. mix chutney, banana, scallions, and cilantro in small bowl.
