Recipe Ingredients for Magic Rolls

3/4 c. water
6 T. butter
3/4 c. vital wheat gluten
1/3 c. flour
1 pinch salt
3 eggs
1 egg white

Recipe Directions for Magic Rolls

  1. Preheat oven to 425 F. Get out a large, nonstick, heavy cookie sheet.

  2. Put water and butter in a 2 qt. saucepan over med. heat, let the butter melt.

  3. Combine flours and salt a separate bowl

  4. When butter is melted and starts to simmer, add dry ingredients all at once, stirring vigorously with a wooden spoon. Dough will become smooth and leave sides of pan. Stir until no flour shows, then remove from heat.

  5. Stir in eggs one at a time, mixing well after each. After the whole eggs, dough should form stiff peaks, after the egg white, it should form softer peaks. If dough already seems soft, (depends on the size of your eggs) add egg white a tablespoon at a time to get right consistency.

  6. Dough should form mounds that do not spread, but settle a bit and make smooth batter rolls on the baking sheet. Dough that is too still will make small rolls.

  7. Bake rolls 25 to 28 min. until golden brown and crusty on top.

  8. Note: These freeze well, and you can make them in any shape for subs and such.
