Recipe Ingredients for Maggie's Lo-Cal Lentil Stew

2 tbsp olive oil, extra virgen
2 medium onions, chopped
1 cup green pepper, chopped
1 cup celery, chopped
1 1/2 cup leek, chopped
1 1/2 cup lentils
3 cups water
8 ounce chicken, dark meat, diced

Recipe Directions for Maggie's Lo-Cal Lentil Stew

  1. Chop all ingredients

  2. Sautee onions, garlic, celery, leek, green pepper

  3. Add the can of tomato sauce

  4. Add the water

  5. Add the lentils

  6. And add the chicken

  7. Bring it to a boil and bring down to medium heat for 45-50 minutes or until lentils are soft.
