Recipe Ingredients for Maggie's Carrot Cake

1 1/2 c olive oil
1 c sugar
1 c brown sugar
4 eggs
2 c flour, sifted
1 tsp salt
2 tsp baking powder
2 tsp baking soda
1 tsp vanilla
3 c grated carrots
1 c crushed pineapple
8 oz cream cheese
1 c powdered sugar
1/2 c butter
1 1/2 tsp vanilla

Recipe Directions for Maggie's Carrot Cake

  1. Beat olive oil, sugars, and eggs.

  2. Sift & add the dry ingredients to mixture.

  3. Add vanilla.

  4. Add & mix well carrots & pineapple.

  5. Bake 350 degress for glass 13 x 9 dish or 375 for metal pan

  6. 30-50 mins (usually takes 30 mins)

  7. For frosting, mix together the cream cheese, pow'd sugar, butter, and vanilla.
