6 eggs
4 T mayonnaise
2 T curry powder
1 T fresh mint

Recipe Directions for Madras Egg Salad

  1. Hard boil eggs

  2. Toast spices and add to mayonnaise, add mint.

  3. Plunge eggs into ice bath to prevent brown rings

  4. Mash eggs and mayo mix. Adjust seasoning.
