Recipe Ingredients for Madhur Jaffrey's Pork Madras

2 medium (2-1/2" dia) Onions
24 oz Pork, Fresh, Loin, Tenderloin
800 grams Organic Diced Tomatoes
1 cup Lite Coconut Milk
1 tbsp Coriander Seed
1 tsp Cloves, Ground
3 tsp Garlic
1 pepper Peppers, Hot Chili, Red
1 tsp Fennel Seed

Recipe Directions for Madhur Jaffrey's Pork Madras

heat a small frying pan to hot on medium heat and stir the spices until aroma comes. Let cool and put in spice blender. Finely chop onions and saute until brown on the edges over medium high heat. and the meat chopped into 1 inch pieces and stir for 5 minutes. Add the tomatoes chopped fine, spices and coconut milk and bring to a boil. Let simmer over medium heat until it's cooked down and the sauce is sticking to the meat. Garnish with fresh chopped cilantro and serve with Basmati rice.
