A sublime tomato soup. Great with warm & crusty, french or sourdough bread.

Recipe Ingredients for La Madeleine's Tomato Basil Soup

4 cups canned tomatoes, crushed
4 cups tomato juice
14 fresh basil leaves, washed
1 cup heavy cream
1/4 pound butter, sweet cream unsalted
1/2 teaspoon salt
1/4 teaspoon cracked black pepper

Recipe Directions for La Madeleine's Tomato Basil Soup

  1. Combine tomatoes & tomato juice in large saucepan; simmer on medium/low heat for 30 minutes.

  2. Puree, along with the basil leaves, in small batches, in a blender, food processor - or with a hand-held food blender, right in the pot.

  3. Return to saucepan; add cream and butter, while stirring, continue to simmer over low heat; 3 minutes.

  4. Garnish with basil leaves and serve

  5. with your favorite bread.
