These are made with lean ground turkey and quinoa. Much healthier than the alternative. They can be topped with tomatoes, a jar of marinara or my homemade red sauce.

Recipe Ingredients for Made-Over Stuffed Bell Peppers

1/2 cup quinoa
1 cup water
1 tsp extra virgin olive oil
6 medium bell peppers
1 lb fresh ground turkey, lean
4 large egg whites
1/2 cup onion, minced
1/3 cup bread crumbs
5 saltine crackers, crushed
1 ground pepper, to taste
1 red pepper, to taste
1/8 tsp sea salt
1 tsp dried oregano
1 tsp dried basil

Recipe Directions for Made-Over Stuffed Bell Peppers

  1. Preheat over to 350*F.

  2. Cook the quinoa with 1 cup of water and 1 tsp of olive oil. Set aside to cool.

  3. Cut tops from bell peppers, and clean the peppers out.

  4. Combine remaining ingredients with quinoa.

  5. Spray a deep pan with nonstick cooking spray.

  6. Fill peppers with mixture and place them in the pan.

  7. Top with 1/2 of the sauce.

  8. Cover and bake for 1 hour. Remove cover, top with remaining sauce and bake for an additional 15 minutes.

  9. Can add parmesan to the top as well.
