Recipe Ingredients for mad4moon Sage and Onion Chicken with Cranberry

1 tbsp olive oil
2 onions, finely chopped
4 cloves garlic, minced
1 1/2 tsp dried sage leaves
1/2 tsp black pepper
1/2 tsp salt
1 pound fresh mushrooms
1 1/2 cups brown rice, rinsed
1 cup dried cranberries
2 cups chicken broth (low sodium)
1 cup orange juice, fresh squeezed (plus zest)
3 pounds chicken thighs (skinless bone-in)
2 tbsp sliced almonds, toasted

Recipe Directions for mad4moon Sage and Onion Chicken with Cranberry

  1. In a skillet, heat oil over medium heat for 30 seconds.

  2. Add onions and cook, stirring, until softened, about 3 minutes. Add garlic, sage, pepper and salt and cook, stirring, for 1 minute.

  3. Add mushrooms and stir to coat. Add rice and stir to coat. (Note: You may substitute wild rice for half of the brown rice.) Stir in cranberries.

  4. Add broth and orange juice + zest, and bring to a boil. (You may use any combination of broth plus juice to make the dish more or less sweet, as long as the total is 3 cups. Recipe actually calls for 4 cups total but I found that the rice was mush so I decreased the total liquid.)

  5. Spoon half the rice mixture evenly over the bottom of greased slow cooker stoneware. Arrange chicken pieces evenly over top. Cover with remaining rice mixture.

  6. Place two clean tea towels, each folded in half, over top of stoneware to absorb moisture. Cover and cook on Low for 5 hours or on High for 2.5 hours. (Again, recipe says Low for 6 hours or High for 3 hours, but I found the rice too soft and the chicken is still plenty cooked with the lesser time.)

  7. Spoon almonds evenly over cooked rice and serve immediately.
