Mac's Tomato Soup Recipe

This is a yummy rich soup, plain and simple, and a great favourite of my family. May be bottled and will hold in jars if sealed successfully for up to 4 years so it's great to get in when summer tomatoes are cheap and plentiful. Please note: The 59 servings stated is to bring this recipe to a 100g serving for easy calculation when serving. Make sure that if you add butter and or milk and cornstarch that you add this to your total.

Recipe Ingredients for mac's tomato soup

5 kg tomatoes, ripe
450 g onion
150 g malt vinegar
200 g sugar

Recipe Directions for mac's tomato soup

  1. Blanch tomatoes in boiling water, pierce to break skin and remove skin.

  2. Slice onions and sweat until clear in large heavy-based stock pot. Put aside.

  3. Put tomatoes and vinegar in stock pot and slowly bring to boil. Simmer slowly for 30-45 minutes until tomates have broken up.

  4. Add sugar and salt and pepper to taste and simmer for a further 10-20 minutes.

  5. If you prefer no pips strain through cheese cloth. Also - if you would like it less rich or to make it go further, add 2 cups of water when you start the tomatoes.

  6. To serve: Add a small knob of butter when reheating. Serve hot with a swirl of cream and chopped basil. If a thicker, creamier soup is preferred add 1/4 a cup of milk per serving with 1/2 tsp of cornstarch, to be stirred in towards the end of the reheating process.

  7. To bottle: bottle as usual into mason jars and store out of bright light (only because this can leach the rich colour!).
