Recipe Ingredients for Macrobiotic Sweet Carrot Bread

2 cups Oats, dry
1 1/2 tsp Cinnamon
1/2 tsp Dried Ginger
1/4 tsp Salt, Sea
1 1/4 cup Water
2 tbsp Pumpkin, Puree
2 cups Carrots, Shredded

Recipe Directions for Macrobiotic Sweet Carrot Bread

  1. In small saucepan, combine water, sea salt, cinnamon, ginger, and pumpkin puree.

  2. Heat over low flame, stirring just until a uniform consistency is achieved.

  3. Remove from flame and gradually stir in oats.

  4. Stir in shredded carrots (and 1/4 cup raisins and/or 1/4 cup toasted walnuts if using).

  5. Spread mixture in lightly oiled baking dish and bake at 350 (F) for 45 minutes.
