Weight Watcher's 5 points mac and cheese recipe, with some adjustments to add veggies, remove salt, and go gluten free.

Recipe Ingredients for Macoloccoli and Cheese

8 oz uncooked macaroni
2 cups broccoli florets
1/2 cup fat free sour cream
12 oz skim milk
8 oz reduced fat cheddar cheese
1 tbsp Dijon mustard
1/4 tsp pepper
1/8 tsp nutmeg
2 tbsp bread crumbs
2 tbsp Parmesan cheese

Recipe Directions for Macoloccoli and Cheese

  1. Note: The skim milk should be non-fat evaporated milk. I'm not sure whether that's more calories, but if it is, it shouldn't be by much. It won't add fat, in any case. You can also use asparagus, cauliflower, whatever healthy vegetable you fancy, instead of broccoli. Again, it shouldn't change the calories too much. I use Tinkyada rotini noodles and Udi's whole grain bread for the crumbs to make it gluten free. Make sure your Dijon is gluten-free, too.

  2. Cook the macaroni and steam the broccoli. While still hot, mix together with the sour cream and set aside.

  3. Scald the milk. Lower the heat and add the shredded cheddar. Cook at low heat, stirring constantly, until the cheese melts. Mix in the mustard, pepper, and nutmeg.

  4. In a casserole, mix the sauce with the pasta and broccoli. Mix breadcrumbs with Parmesan and sprinkle over the mac and cheese. Put in a preheated 350 degree oven for about 45 minutes, or until breadcrumbs are golden brown.
