2 tbsp fresh thyme
4 ounces broccoli, trimmed
1 tbsp fresh parsley, chopped
3 ounces long grain white rice
1 tbsp carrot, brunoise
1 tbsp celery, brunoise
2 tbsp onion, brunoise
1 cup chicken stock, hot
1 tbsp fresh thyme
1 ounce canola oil
3 ounces red onion, thinly slice
2 ounces dry sherry
6 ounces butter, cubed
