Recipe Ingredients for Macaroon Muffins

1 c. whole wheat flour
3/4 c. fiber one cereal
2 scoops protein powder
1 c. oats
2 tsp. baking powder
1 tsp. cinnamon, 1/2 tsp. vanilla
1 c. lite coconut milk
1/4 c. honey
8 oz. pineapple, canned
1/2 c. walnuts, chopped
1/4 c. pecans, chopped
1 c. shredded coconut

Recipe Directions for Macaroon Muffins

  1. 375* oven, grease muffin cups. Whisk nuts and pinepple with dry ingred. in medium bowl.

  2. Lightly beat wet ingred. in large bowl, add dry mix.

  3. Fold in coconut.

  4. Bake 15-20 minutes.
