Recipe Ingredients for Macaroni with Tomatoes

1 1/2 cps elbow macaroni
1 cp shredded cheddar cheese
10 oz stewed tomatoes
3/4 cp skim milk
1 tbsp flour
1 tbsp butter

Recipe Directions for Macaroni with Tomatoes

  1. Cook 1 1/2 cps elbow macaroni in boiling water for 8 minutes. Stir to keep macaroni from sticking together.Drain when the macaroni is al dente.

  2. While the macaroni is cooking, make a roux with the butter and flour. Add milk to roux and using a whisk, cook over medium heat until you have a white sauce.

  3. Add 1/4 cp cubed cheddar cheese to the white sauce and stir until it melts. Drain the tomatoes in a collander, and add to the drained macaroni, stirring to mix. Add the white/cheese sauce mixture and stir together. Layer 1/2 of this mixture in a 9 x 9 glass pan, and cover each layer with 1/3 to 1/2 cp shredded sharp cheddar cheese. Bake at 350 for 35 minutes.
