Recipe Ingredients for Macaroni and Tomato w/ Zucchini

3 1/4 cups whole wheat macaroni
3 1/4 cups diced tomatoes
1 tbsp butter
2 cloves garlic
1/2 tbsp pepper
1 cup zucchini, sliced

Recipe Directions for Macaroni and Tomato w/ Zucchini

  1. Put Macaroni on the stove to boil. Cook until el dente.

  2. Slice Zucchini and pan fry or broil.

  3. Saute garlic with a tsp of butter in a large covered pan. Once fragrant, empty tomatoes into pan and heat until warmed through.

  4. Add macaroni to mixture and continue to heat for enough time to allow the macaroni to absorb the tomato juice.

  5. Serve with a sprinkle of parmesean cheese, shrimp, scallops, or chicken.
