A lower fat version of macaroni salad

Recipe Ingredients for Macaroni Salad

13 1/4 ounces whole wheat elbow macaroni
2 stalks celery
10 ounces sliced green olives
2 cups shredded carrots
2 cups fat free mayonaise
1 tbsp yellow mustard
2 tbsp vegetable oil
1 tsp salt

Recipe Directions for Macaroni Salad

  1. Boil macaroni according to package directions, adding salt to water, and then run under cold water when you drain. Drain well!! Chop celery into bite size pieces. Drain olives. Grate carrots on a box grater or buy them already shredded. In a small bowl mix the mayonaise, mustard and vegetable oil. In a large bowl mix the boiled macaroni, celery, green olives, and carrot. Add the mayonaise mixture. Chill and serve.

  2. Tip: For a more "meal-like" dish add a half of a can of drained tuna to each portion.
