from better homes bridal cookbook; we tripled the recipe for a big party and replaced the cheddar with homemade vegan cheeze (1 full recipe of cheeze was perfect, otherwise use 3/4 c cubed american or cheddar) and used eggs from our backyard

Recipe Ingredients for Macaroni salad


Vegan cheeze (see Colby Cheeze recipe for directions, use whole thing):
1 1/2 c water
5 T agar flakes (or 5 rounded t agar powder)
1/2 c pimiento
1/2 c cashew (raw pieces)
1/4 c nutritional yeast
3 T lemon juice
2 T tahini
2 t onion granules
1 t salt
1/4 t garlic granules
1/8 t ground dill seed
1/8 t mustard powder

Other ingredients:
6 oz brown rice fusilli (3 cups)
3 celery stalks, thinly sliced
1 1/2 c frozen peas
1 1/2 c radishes, thinly sliced
3 green onions, thinly sliced
1 1/2 c homemade mayonnaise
3/4 c dill pickle relish
5 T mustard (dijon or horseradish style)
1 black pepper
6 hard boiled eggs

Recipe Directions for Macaroni salad

  1. Make cheeze at least 3 hours in advance and chill.

  2. Cook pasta. Drain and rinse. Combine pasta, cheeze cubes, celery, peas, radishes, and green onion in large bowl.

  3. Stir together mayo, relish, mustard, and pepper to make dressing. (Add salt if desired; we left it out because we oversalted our homemade mayo.)

  4. Pour dressing over pasta. Add chopped hard boiled eggs. Stir gently to coat. Refrigerate at least 4 hours before serving to allow flavors to combine.

  5. Original recipe adds milk to the dressing, and again after removing from the fridge to moisten, but we found this unnecessary.
