Makes 28 servings



Safe for Oral Allergy Syndrome. Serving size is 1/4 cup. Total yield is 7 cups. Keeps well. Can be made ahead of time and is especially good after 24 hours of time in refrigerator to let flavors fully mingle.

Recipe Ingredients for Macaroni Salad

1 lb elbow macaroni
1 cup mayonnaise
1 tbsp dijon mustard
2 tbsp red wine vinegar
2 tbsp sugar
1 cucumber, chopped
1/2 large tomato, diced
1/3 cup red onion, chopped
1 tsp dill
1 tsp salt
1 tsp black pepper
1/4 cup chives, chopped

Recipe Directions for Macaroni Salad

  1. Boil water and cook macaroni.

  2. In a large mixing bowl, combine mayo, mustard, red wine vinegar, sugar, salt, pepper, and dill. Add all chopped veggies and mix.

  3. Drain the macaroni and rinse with cold water to halt cooking and bring to appropriate temperature for eating.

  4. Stir in macaroni. Taste for salt, pepper, and other seasonings. Serve cold.
