Uh... yum! My grandmother used to make this. It's simple and can be made in large quantities for summer eating. I've found it lasts up to 10 days in the refrigerator.

Recipe Ingredients for Macaroni Salad - 1 serving

1 cup elbow macaroni
2 tbsp light miracle whip
1/4 raw onion
1/2 raw tomato
4 oz. frozen peas
2 oz. albacore tuna
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Macaroni Salad - 1 serving

  1. prepare macaroni (as much as you want). cool or rinse with cold water.

  2. mix in diced tomatoes, onion, frozen peas (no need to thaw), and cans of tuna to taste.

  3. mix in a couple spoonfuls of Miracle Whip (regular, light, or fat free)

  4. Add Salt and Pepper or substitute.

  5. the "recipe" is my estimate for nutritional content in one serving. Makes a great breakfast, lunch, dinner, picnic, or lunch at work. Most of the ingredients are available anywhere in the world. i've made this in Australia, Southeast Asia, Europe, and South America. The hardest item to find is frozen peas. I've occasionally had to substitute canned peas, but they're a little mushy.

  6. Don't replace Miracle Whip with mayo unless you absolutely have to. It's the secret ingredient! Outside the US, you might find "Salad Cream" is a similar taste and consistency.
