Trying to hide broccoli and cauliflower in my toddler's favourite food -- pasta.

Recipe Ingredients for Macaroni with Hidden Veggie Peanut Sauce

375 grams whole wheat macaroni
1 cup plain soy milk
1 cup water
4 tbsp natural peanut butter
4 tbsp soy sauce, or tamari
1 cup broccoli, chopped
1 cup cauliflower, chopped

Recipe Directions for Macaroni with Hidden Veggie Peanut Sauce

Cook macaroni according to package directions. Process the remaining ingredients in a food processor. Cook covered over medium heat for 5-7 minutes, stirring frequently to prevent sticking/scorching. Remove lid and continue cooking over medium heat for an additional 7-10 minutes. Stir into pasta and serve. Adults may wish to add salt, pepper, or hot sauce to their serving. Substitute cauliflower for the broccoli if the kids have a 'green' aversion. If you pre-steam the veggies, it should make a smoother sauce.
