Recipe Ingredients for Macaroni and Four Cheeses

16 oz Macaroni, Dry, Enriched
1 tbsp Coconut Oil, Unrefined, Organic
2 tbsp Salt, Table
2 cup Milk, Lowfat, Fluid, 1% Milkfat
4 slice (1 oz) Cheddar Cheese
12 oz Winter Squash
2 slice (1 oz) Monterey Cheese
0.13 tsp Cayenne Pepper
0.25 cup Bread Crumbs, Dry, Grated, Plain
2 tbsp Parmesan, Grated Cheese

Recipe Directions for Macaroni and Four Cheeses

  1. Preheat oven to 375. Oil a 2 quart casserole dish. Set aside.

  2. In a medium stock pot cook macaroni to package directions.

  3. In a 3-4 quart sauce pan over medium heat, combine milk and squash, stirring to break up and defrost the squash. Increase the heat to medium-high and bring to a simmer, stirring occasionally. Remove from heat and whisk in cheeses, pepper and salt.

  4. Drain pasta when done and place back into the pot. Stir in cheese mixture and transfer to the prepared casserole dish.

  5. In a medium bowl, combine bread crumbs, parmesan cheese and oil. Sprinkle over the top of the macaroni mixture.

  6. Place casserole dish on a baking sheet and place in the oven for 30 minutes, then place in heated broiler until the crumbs are browned.
