Mostly taken from a Weight Watcher's recipe but better!

Recipe Ingredients for Macaroni and Cheese (WW)

4 cups cooked elbow macaroni
2 cups shredded cheese, low fat
1 cup cottage cheese, low fat
1 cup corn
3/4 cup sour cream, low fat
1/2 cup skim milk
2 T. minced onion
1 1/2 tsp margarine
1/2 tsp salt
1/4 tsp pepper
1 egg, lightly beaten
1 Cooking spray
1/4 cup dry bread crumbs
1 tsp margarine
1/4 t. paprika

Recipe Directions for Macaroni and Cheese (WW)

  1. Preheat oven 350F.

  2. Combine first 10 ingredients; stir well. Spoon into a shallow 2-qt baking dish coated with non-fat spray.

  3. Combine breadcrumbs with margarine and paprika; stir well. Sprinkle breadcrumb mixture over the casserole.

  4. Cover and bake for 45 minutes.

  5. Uncover casserole and bake an additional 5 minutes.
