Recipe Ingredients for Macaroni and Cheese with Vegies

14 1/2 ounces Barilla Plus elbow macaroni
2 1/2 cups yams, peeled, chopped and steamed (about 1 medium)
16 ounces sharp cheddar cheese, grated
2/3 cup parmesan cheese, grated
2 tablespoons flour
8 ounces cream cheese
2 cups skim milk
2 cloves garlic, minced
2 cups onions, chopped
3 cups mushrooms, chopped
1 cup zucchini, chopped
1 tomato, chopped
5 slices bread, whole wheat
1 clove garlic
1/2 teaspoon rosemary
1/2 teaspoon thyme
2 tablespoons olive oil, extra virgin

Recipe Directions for Macaroni and Cheese with Vegies

  1. Prepare the yams; steam them until mostly tender.

  2. Preheat the oven to 350 degrees, if baking immediately. Butter a 10x14 inch baking dish. Bring a large pot of water to a boil.

  3. In a large bowl, combine the cheddar, Parmesan, and flour and toss until well combined. Set aside.

  4. In a small, heavy saucepan, melt the cream cheese over low heat, stirring with a whisk. Slowly whisk in the milk and garlic until smooth. Remove from heat and set aside.

  5. Add the macaroni to the boiling water and return to a boil, stirring to separate the pieces. Boil for about 7 minutes. Drain and return to the pot. Add the cheddar cheese mixture to the macaroni and stir well. Add the cream cheese mixture and sweet potatoes.

  6. Sauté the onions for about 2 minutes. Add the mushrooms and sauté until just beginning to release their moisture. Add the zucchini for about a minute. Add to macaroni, along with chopped tomato.

  7. Transfer to prepared dish. At this point, the casserole can be refrigerated until ready to bake.

  8. Chop the bread into coarse crumbs, either by hand or in a food processor. Add the garlic, rosemary and/or thyme (if using only one herb, double the quantity), and finely chop. Add the olive oil and season with salt and pepper. Process or stir for a few seconds until mixed. Sprinkle onto the macaroni.

  9. Cover tightly with foil and bake 30 minutes. To brown the topping, remove the foil during the last 10 minutes.
